  • 14 oz package little smoked sausages (e.g., Lit’l Smokies)
  • 1 lb thin-cut bacon (about 12 slices, cut into thirds)
  • 1 cup packed brown sugar (light or dark)
  • Optional: pinch of cayenne pepper or chili powder
  • Optional: 1 tablespoon maple syrup

Instructions

  1. Preheat oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
  2. Cut each bacon slice into three equal pieces.
  3. Wrap one piece of bacon around each little smoked sausage. Secure with a toothpick, pushing through the overlapping ends and into the sausage.
  4. Pour packed brown sugar into a shallow bowl. Roll each bacon-wrapped smokie in the sugar, pressing gently to coat the entire bacon surface.
  5. Arrange the sugar-coated smokies on the wire rack, leaving space between each one so they don’t touch.
  6. Bake for 25-30 minutes, until bacon is crispy and sugar is bubbly and dark amber. Check at 25 minutes and add 3-5 minutes if needed.
  7. Remove from oven and let cool on the rack for 5 minutes. The glaze will harden into a crispy shell as it cools.
  8. Serve warm, within 30 minutes of baking.

Notes

Soak toothpicks in water for 10 minutes to prevent burning. Use thin-cut bacon for best results. If sugar browns too quickly but bacon isn’t crispy, tent loosely with foil for the last 10 minutes. For extra crispiness, use an air fryer at 375°F for 10-12 minutes, flipping halfway.
