This hot buttered rum batter is a winter ritual—easy to make, rich and spiced, and perfect for cozy gatherings or quiet evenings. Just mix, store, and enjoy all season long.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • Pinch of ground cardamom (optional)
  • 2 tablespoons batter (per drink)
  • 1 1/2 ounces dark or spiced rum (per drink)
  • 6–8 ounces hot water (per drink)
  • Optional garnishes: cinnamon stick, star anise, whipped cream

Instructions

  1. Cream the butter and sugars: In a medium mixing bowl, combine the softened unsalted butter, dark brown sugar, and granulated sugar. Beat with an electric mixer on medium speed for 2-3 minutes, until light, fluffy, and pale in color. Scrape down the sides halfway through.
  2. Add the vanilla and salt: Pour in the vanilla extract and sprinkle in the salt. Beat on low speed for another 30 seconds until well combined.
  3. Mix in the spices: In a small bowl, whisk together the ground cinnamon, nutmeg, cloves, allspice, and cardamom if using. Add the spice blend to the butter mixture and beat on low speed until fully incorporated. Scrape the bowl once more.
  4. Transfer to a jar: Scoop the batter into a mason jar or airtight container. Press down firmly to remove air pockets, then seal tightly. Refrigerate for up to 3 weeks or freeze for up to 3 months.
  5. Make a drink: Boil water and let it sit for 30 seconds. Scoop 2 tablespoons of batter into a mug. Add 1 1/2 ounces of dark or spiced rum. Pour 6-8 ounces of hot water over the top and stir vigorously until fully dissolved.
  6. Garnish and serve: Drop in a cinnamon stick or star anise. Optionally top with whipped cream and a dusting of nutmeg. Serve immediately.

Notes

Use high-fat European-style butter for best creaminess. Let butter soften for 30-45 minutes before starting. Avoid boiling water directly from the kettle—let it sit 30 seconds to prevent butter separation. The batter can be frozen for up to 3 months.
