  • 6 cups seedless watermelon, cubed and slightly crushed
  • 8 oz block feta cheese, crumbled
  • 1/2 cup fresh mint leaves, loosely packed and roughly chopped
  • 2 tablespoons fresh lime juice (from about 1 lime)
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon sea salt
  • Pinch of black pepper

Instructions

  1. Prepare the Watermelon (5 minutes): Cut the watermelon in half, then into thick slices. Cut off the rind, leaving just the red flesh. Cut the flesh into 1-inch cubes. Place about 4 cups of the cubes in your large bowl. Take the remaining 2 cups of cubes and give them a gentle crush with a fork or your hands. You want some smaller pieces and some juice to come out. This is your natural dressing base!
  2. Crumble the Feta (1 minute): Pat the block of feta dry with a paper towel. Using your fingers, crumble the feta into the bowl with the watermelon. Don’t worry about making it perfect—uneven pieces are great. Some will be small, some will be larger. This is the secret to a better texture.
  3. Chop the Mint (1 minute): Stack the mint leaves on top of each other. Roll them up tightly like a cigar, then slice thinly across the roll. This creates beautiful ribbons (chiffonade). Give them a rough chop so they aren’t too long. Add them to the bowl.
  4. Make the Dressing (1 minute): In a small bowl or measuring cup, whisk together the fresh lime juice, olive oil, a pinch of salt, and a tiny bit of black pepper. Give it a taste. It should be bright and zesty.
  5. Assemble the Salad (2 minutes): Pour the dressing over the watermelon, feta, and mint. Use a large spoon or your hands (clean ones!) to gently toss everything together. Be careful not to break up the watermelon cubes too much. You just want to coat everything evenly.
  6. Serve Immediately: Transfer the salad to your serving platter or bowl. If you want to be fancy, you can add a few extra mint leaves and a final crumble of feta on top. Sprinkle with a tiny bit of flaky sea salt right before serving. Serve cold!

Notes

Don’t dress the salad too early or it will become watery. Use a sharp knife to avoid mushy watermelon. Crushing some of the watermelon creates a natural dressing. Serve cold for best results. Leftovers can be stored in an airtight container in the refrigerator for 1-2 days, but the texture will change as the watermelon releases juice.
