Instructions

  1. Measure 9 cups of Rice Chex into a large mixing bowl and set aside.
  2. In a large microwave-safe bowl, combine 1 cup semi-sweet chocolate chips, ½ cup creamy peanut butter, and ¼ cup unsalted butter. Microwave in 30-second intervals, stirring well after each, until smooth and fully melted (about 1 ½ to 2 minutes total).
  3. Stir in 1 teaspoon vanilla extract.
  4. Slowly drizzle the warm chocolate mixture over the Chex cereal. Use a rubber spatula to gently fold until every piece is evenly coated.
  5. Let the coated cereal sit for 2-3 minutes to cool slightly.
  6. Transfer the coated cereal to a large resealable plastic bag. Add 1 ½ cups powdered sugar. Seal the bag tightly and shake vigorously for 30-45 seconds until every piece is coated.
  7. Pour the reindeer chow onto a parchment-lined baking sheet and spread in an even layer. Let cool completely, about 15-20 minutes.
