These kid-approved cinnamon sugar roasted pumpkin seeds are crispy, buttery, and perfectly sweet—a nostalgic fall snack that’s quick and easy to make. Boiling the seeds before roasting ensures a crunchy texture every time.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (about 4 ounces)
  • 2 cups water
  • 1 teaspoon fine sea salt (plus more for boiling water)
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Rinse the pumpkin seeds in a colander under cool running water. Pick off any large pieces of pumpkin flesh.
  3. In a small saucepan, bring 2 cups of water and 1 teaspoon of salt to a rolling boil. Add the rinsed seeds and boil for exactly 10 minutes.
  4. Drain the seeds in the colander and shake off excess water. Spread them out on a clean kitchen towel or paper towels and pat them very dry. Let them sit for 5 minutes.
  5. In a medium bowl, whisk together the melted butter, granulated sugar, ground cinnamon, and vanilla extract (if using) until the sugar is mostly dissolved.
  6. Add the dried seeds to the bowl and stir until every seed is coated.
  7. Pour the coated seeds onto the prepared baking sheet and spread them into a single layer.
  8. Roast for 25-30 minutes, stirring halfway through (at the 12-15 minute mark) to ensure even browning. The seeds should be golden brown and fragrant when done.
  9. Remove the baking sheet from the oven and let the seeds cool on the pan for at least 15 minutes.
  10. Once cool, break up any clumps with your fingers and enjoy.

Notes

Boiling the seeds in salted water is essential for crispy texture. Dry seeds thoroughly after boiling to prevent sogginess. Let seeds cool completely before eating for maximum crunch. Store in an airtight container at room temperature for up to 2 weeks. For dairy-free, substitute butter with coconut oil or vegan butter.
