Ingredients

Scale
  • 1 pound store-bought pizza dough
  • 1/4 cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt
  • 2 tablespoons unsalted butter, melted
  • 8 ounces prosciutto, thinly sliced
  • 8 ounces salami (Genoa or peppered)
  • 6 ounces pepperoni, large slices
  • 8 ounces sharp cheddar, cubed
  • 8 ounces gouda, sliced
  • 4 ounces brie
  • 1 cup beer cheese dip
  • 1 cup mixed olives (preferably castelvetrano)
  • 1/2 cup cornichons or baby pickles
  • 1/2 cup grainy mustard
  • 1/2 cup honey
  • 1 cup grapes or apple slices
  • 1/2 cup nuts (roasted almonds or pecans)
  • Assorted crackers and breadsticks (about 2 cups total)
  • Fresh rosemary sprigs for garnish
  • Edible flowers or herbs for garnish (optional)

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. On a lightly floured surface, divide pizza dough into 6 equal pieces. Roll each piece into a 12-inch rope. Cut each rope into three sections: one 6-inch piece (crossbar) and two 3-inch pieces (uprights).
  3. Pinch the ends of the uprights together to form a V-shape, then attach the crossbar by pressing it firmly onto the top of the uprights to form a goal post shape. Repeat with remaining dough to make 6 goal posts.
  4. Bring a large pot of water to a boil. Add baking soda (it will fizz). Drop 1-2 pretzel goal posts into the water for about 20 seconds. Remove with a slotted spoon and place on prepared baking sheet. Repeat with all goal posts.
  5. Brush each goal post with beaten egg wash. Sprinkle generously with coarse salt. Bake for 10-12 minutes until deep golden brown. Remove from oven and brush with melted butter immediately. Let cool on the sheet.
  6. While pretzels bake, prepare board components: cube cheddar, slice gouda into thin triangles, leave brie whole. Arrange small bowls for beer cheese, mustard, honey, and olives.
  7. Roll salami slices into cylinders. Fold prosciutto into loose ribbons. Leave pepperoni as is or stack slices together. Wash and dry grapes.
  8. To assemble the board: Place pretzel field goals at the back of the board, standing upright. Place small bowls in the center or along edges. Group meats together in one section, cheeses in another. Scatter grapes, nuts, pickles, and crackers in empty spaces. Tuck rosemary sprigs around the board.
  9. Serve immediately at room temperature. If making pretzels ahead, reheat in a 300°F oven for 5 minutes before serving.

Notes

The baking soda bath is essential for authentic pretzel texture. Don’t overcrowd the pot when boiling pretzels. Let pretzels cool completely before storing. Build the board in layers starting with largest items. Serve everything at room temperature. Have extra ingredients on hand for unexpected guests.
