  • 3 tablespoons cold unsalted butter, cut into small cubes

Instructions

  1. Preheat oven to 350°F (175°C). Place a baking sheet on the middle rack.
  2. Prepare the apple filling: In a medium bowl, combine chopped apples, granulated sugar, 1 tablespoon flour, ½ teaspoon cinnamon, nutmeg, and lemon juice. Stir until apples are evenly coated. Let sit for 5 minutes.
  3. Make the crisp topping: In a small bowl, whisk together oats, ¼ cup flour, brown sugar, ¼ teaspoon cinnamon, and salt. Add cold butter cubes. Use a pastry cutter or fingertips to cut butter into dry mixture until it resembles coarse, pebbly sand with some pea-sized butter pieces remaining.
  4. Assemble the ramekins: Divide apple mixture evenly between two 8-ounce ramekins. Sprinkle crisp topping evenly over each, covering apples completely. Do not press down.
  5. Bake: Place ramekins on baking sheet and bake for 25 to 30 minutes, until filling is bubbly and topping is deep golden brown. If topping browns too quickly after 20 minutes, tent loosely with foil.
  6. Cool slightly & serve: Let ramekins cool on a wire rack for at least 10 minutes before serving.

Notes
