  • 1/4 teaspoon flaky sea salt (optional, for salted caramel)
  • 4 ounces brie cheese
  • 4 ounces sharp cheddar cheese (aged, sliced thin)
  • 2 ounces goat cheese (optional)
  • 1/2 cup pecans (toasted lightly)
  • 1/2 cup walnuts (raw or toasted)
  • 1/4 cup dark chocolate chips or chunks (70% cacao or higher)
  • 2 tablespoons honey (for drizzling)
  • Fresh rosemary or thyme sprigs (for garnish)
  • Sliced baguette or crackers (optional, for serving)

Instructions

  1. Prep the apples: Wash and dry the apples. Slice into thin wedges (about 8-10 slices per apple). Remove cores. Squeeze lemon juice over slices and toss gently to prevent browning. Set aside.
  2. Prepare the caramel: Warm store-bought caramel sauce in the microwave for 10-15 seconds until pourable. Stir in flaky sea salt if desired. Pour into a small serving bowl and place on the board.
  3. Slice the cheese: Cut brie into thin wedges or leave whole. Slice cheddar into thin, bite-sized pieces. If using goat cheese, crumble into a small pile.
  4. Toast the nuts (optional): In a dry skillet over medium heat, toast pecans and walnuts for 2-3 minutes, stirring frequently, until fragrant. Let cool.
  5. Arrange the board: Place the bowl of caramel in the center or slightly off-center. Fan apple slices around the bowl. Place brie and cheddar in separate clusters. Sprinkle nuts and chocolate chunks in empty spaces. Drizzle honey over brie or apples if desired. Garnish with fresh rosemary or thyme sprigs.
  6. Serve immediately: Place board in the center of the table and let everyone dig in.
