Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 6 cups) — a mix of Granny Smith and Honeycrisp or Fuji recommended
  • 1/3 cup granulated sugar (65g)
  • 1/4 cup light brown sugar, packed (50g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves (optional)
  • 1 tablespoon cornstarch (8g)
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats (90g)
  • 3/4 cup all-purpose flour (95g)
  • 1/2 cup light brown sugar, packed (100g)
  • 1/2 cup unsalted butter, cold and cut into small cubes (113g)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional, 60g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13-inch baking dish lightly with butter or non-stick spray.
  2. Peel, core, and slice your apples into 1/4-inch thick pieces. In a large bowl, toss the sliced apples with the granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, cloves, cornstarch, and vanilla extract. Let sit for about 5 minutes.
  3. In a medium bowl, whisk together the oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes. Use a pastry cutter or your fingertips to work the butter into the dry ingredients until the mixture looks like coarse sand with some pea-sized butter pieces remaining. If using nuts, stir them in now.
  4. Spread the apple mixture evenly in your prepared baking dish. Sprinkle the oat crumble topping evenly over the apples. Do not press it down.
  5. Bake for 40-45 minutes, or until the topping is golden brown and the apple filling is bubbly around the edges. If the topping is browning too fast, loosely tent with aluminum foil for the last 10 minutes.
  6. Let the crisp cool on a wire rack for at least 15-20 minutes before serving.

Notes

Don’t skip the lemon juice—it balances sweetness and helps thicken. Cold butter is non-negotiable for a crumbly topping. Let apples sit after tossing to draw out juices. Bake on a rimmed baking sheet to catch drips. For extra crunchy topping, broil for the last 1-2 minutes. Prep apples last to prevent browning.
