A cozy copycat Starbucks gingerbread latte that tastes like the holidays in a mug, made with simple pantry ingredients and ready in under 10 minutes. This recipe was born from a sleepy mistake and has become a treasured morning ritual.

Ingredients

Scale
  • 1/2 cup water (filtered is best, but tap works fine)
  • 1/2 cup granulated sugar (you can use brown sugar for a deeper flavor)
  • 2 tablespoons molasses (unsulphured, like Grandma’s brand)
  • 1 teaspoon ground ginger (I prefer Spice Islands for its warmth without being harsh)
  • 1/2 teaspoon ground cinnamon (Ceylon cinnamon is milder and sweeter)
  • 1/4 teaspoon ground cloves (a little goes a long way)
  • 1/4 teaspoon ground nutmeg (freshly grated if you have it)
  • 1 teaspoon vanilla extract (pure, not imitation)
  • 1 to 2 shots of espresso (about 2 ounces; strong brewed coffee works too)
  • 1 cup milk (whole milk for creaminess, but oat milk or almond milk are great dairy-free options)
  • 2 to 3 tablespoons gingerbread syrup (adjust to your sweetness preference)
  • Whipped cream (optional but highly recommended)
  • Cinnamon stick or star anise (for garnish)

Instructions

  1. Make the gingerbread syrup. In a small saucepan, combine the water, sugar, molasses, ground ginger, cinnamon, cloves, and nutmeg. Whisk everything together over medium heat. Bring it to a gentle simmer—not a rolling boil—and let it cook for about 5 minutes, stirring occasionally. Once the sugar is fully dissolved and the syrup has thickened slightly, remove it from the heat. Stir in the vanilla extract. Let it cool for a few minutes, then strain it through a fine-mesh strainer if you want a smoo…
  2. Brew your espresso. While the syrup is cooling, pull your shots of espresso. If using a Moka pot, fill the bottom chamber with water to the fill line, add finely ground coffee to the filter basket (don’t pack it down), and screw the top on tightly. Place it on medium heat and wait for the gurgle (about 5 minutes). If using instant espresso, mix 2 teaspoons with 2 ounces of hot water.
  3. Steam and froth the milk. Pour your milk into a small saucepan and heat it over medium-low heat until it’s hot but not boiling (around 150°F). If you have a milk frother, use it to create velvety foam. If not, shake the milk vigorously in a sealed jar for about 30 seconds, then microwave it for 30 seconds.
  4. Assemble the latte. Add 2 to 3 tablespoons of your gingerbread syrup to your mug. Pour in the hot espresso and give it a quick stir. Slowly pour the steamed milk over the top, holding back the foam with a spoon. Spoon the foam on top.
  5. Garnish and serve. Top with a generous dollop of whipped cream, if desired. Dust with a pinch of cinnamon or nutmeg. Add a cinnamon stick or star anise for garnish.

Notes

If your latte tastes too sweet, add a pinch of salt to balance it out. If it’s not sweet enough, add another tablespoon of syrup. The syrup keeps in the fridge for up to two weeks. For a dairy-free version, use oat milk. For an iced version, brew the espresso, let it cool slightly, then pour over ice with cold milk.
