  • 3/4 cup milk (whole milk, oat milk, or almond milk)
  • 2 tablespoons pumpkin puree (100% pure pumpkin, not pie filling)

  • 1/2 teaspoon pumpkin pie spice (plus extra for garnish)
  • 1/4 teaspoon vanilla extract (pure vanilla preferred)
  • Pinch of salt
  • 1/4 cup heavy cream (for whipped topping, optional)
  • 1 teaspoon maple syrup (for whipped topping, optional)
  • 1/4 teaspoon pumpkin pie spice (for whipped topping, optional)

Instructions

  1. Combine the milk and pumpkin puree in a small saucepan. Whisk until fully incorporated and no orange streaks remain.
  2. Heat the mixture over medium-low heat for 2-3 minutes until steaming and tiny bubbles form around the edges. Do not boil.
  3. Add the chai concentrate, maple syrup (or brown sugar), pumpkin pie spice, vanilla extract, and salt. Whisk until combined. The color should deepen to a warm caramel-like orange.
  4. Continue heating for another 1-2 minutes, stirring gently. Do not let it boil. Taste and adjust sweetness or spice if needed.
  5. If desired, froth the top layer of the latte using a milk frother or by whisking vigorously in the mug for about 30 seconds.
  6. For the whipped topping (optional): In a small bowl, combine heavy cream, maple syrup, and pumpkin pie spice. Whip with a whisk or hand mixer until soft peaks form.
  7. Pour the latte into a mug, dollop with whipped cream, and sprinkle with extra pumpkin pie spice or cinnamon. Serve immediately.

Notes

For best results, whisk pumpkin into cold milk before heating to avoid lumps. Do not boil the milk. If you don’t have a frother, shake warm milk in a mason jar for 30 seconds to create foam. Leftover pumpkin puree can be frozen in ice cube trays for later use.
