Ingredients

Scale
  • 3 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 8 ounces cream cheese, softened and cut into cubes
  • 4 tablespoons unsalted butter, cut into pieces
  • 6 cloves garlic, minced
  • 1 cup chicken or vegetable broth, low-sodium preferred
  • ½ cup whole milk or heavy cream, warmed
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper, freshly ground
  • Optional: ¼ cup sour cream for extra tang
  • For garnish: 2 tablespoons fresh chives or parsley, chopped
  • Extra butter pats for serving
  • Flaky sea salt for finishing

Instructions

  1. Prep the potatoes: Peel the Yukon Gold potatoes and cut them into 1-inch chunks. Rinse the chunks in cold water to remove excess starch.
  2. Layer everything in the crockpot: Place the potato chunks in your slow cooker. Add the minced garlic, cubed cream cheese, and pieces of butter on top. Pour in the cup of chicken or vegetable broth. Do not stir.
  3. Cook low and slow: Cover and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the potatoes are tender when pierced with a fork.
  4. Add the milk or cream: Once the potatoes are tender, pour in the warmed milk or heavy cream.
  5. Mash to perfection: Use a potato masher to mash everything together right in the crockpot until you reach your desired consistency. For ultra-smooth potatoes, use a hand mixer on low speed for about 30 seconds, being careful not to overmix.
  6. Season and taste: Add the salt and pepper, then taste and adjust. If too thick, stir in a splash more warm milk or broth. If too thin, let cook uncovered for 15-20 minutes to thicken.
  7. Keep warm until serving: Set the crockpot to the WARM setting and let the potatoes stay warm for up to 2 hours, stirring occasionally.

Notes

For best results, use full-fat cream cheese and warm the dairy before adding. Rinsing the potatoes removes excess starch to prevent gumminess. Season in layers for deeper flavor. These potatoes can be made ahead and kept warm in the crockpot for up to 2 hours.
