This easy crockpot sweet potato casserole with pecan streusel is the ultimate hands-off holiday side dish. The slow cooker does all the work, delivering tender, buttery sweet potatoes topped with a crunchy pecan streusel and gooey marshmallows.

Ingredients

Scale
  • 4 pounds sweet potatoes, peeled and cubed (about 5–6 medium sweet potatoes)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup packed light brown sugar (for streusel)
  • 1/3 cup all-purpose flour
  • 1/4 cup unsalted butter, melted (for streusel)
  • 1/2 teaspoon ground cinnamon (for streusel)
  • 2 cups mini marshmallows (optional)

Instructions

  1. Peel and cube the sweet potatoes into 1-inch pieces (about 8-9 cups).
  2. Toast the pecans in a dry skillet over medium heat for 3-4 minutes until fragrant; set aside to cool.
  3. In a large mixing bowl, whisk together melted butter, brown sugar, granulated sugar, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  4. Add the cubed sweet potatoes to the bowl and toss until evenly coated.
  5. Transfer the coated sweet potatoes to a 6-quart or larger slow cooker and spread into an even layer.
  6. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until sweet potatoes are fork-tender.
  7. Turn off the slow cooker. Mash the sweet potatoes directly in the crockpot using a hand mixer or potato masher until smooth and creamy.
  8. In a medium bowl, combine toasted pecans, brown sugar, flour, melted butter, and cinnamon. Stir with a fork until crumbly.
  9. Sprinkle the pecan streusel evenly over the mashed sweet potatoes. If using, scatter mini marshmallows on top.
  10. Optional: If your crockpot insert is oven-safe, transfer it to the oven and broil on high for 2-3 minutes until marshmallows are golden. Watch carefully to prevent burning.
  11. Let the casserole rest for 5 minutes before serving.

Notes

For a make-ahead option, cook and mash the sweet potatoes up to two days ahead. Reheat in the crockpot on low for about an hour before adding the streusel and marshmallows. Store the streusel separately to maintain crunch. If the casserole is too thin, leave the lid off for the last 30 minutes of cooking. If too thick, stir in a splash of milk or cream.
