This isn’t just a drink; it’s an interactive dessert that brings everyone together. It’s the kind of thing that makes your kitchen the room everyone wants to be in.

Ingredients

  • Whole Milk (4 cups / 960 ml)
  • Heavy Cream (1 cup / 240 ml)
  • Semi-Sweet Chocolate Chips (1 ½ cups / 270 g)
  • Unsweetened Cocoa Powder (¼ cup / 25 g)
  • Granulated Sugar (¼ cup / 50 g)
  • Vanilla Extract (1 teaspoon)
  • Pinch of Sea Salt
  • Marshmallows (2 cups)
  • Whipped Cream (2 cups)
  • Crushed Candy Canes (½ cup)
  • Chocolate Shavings or Curls (½ cup)
  • Toasted Coconut Flakes (½ cup)
  • Caramel Sauce (½ cup)
  • Mini Chocolate Chips (½ cup)
  • Cinnamon Sticks (for stirring)
  • Sea Salt Flakes (like Maldon)
  • Peppermint or Cinnamon Stirrers

Instructions

  1. Melt the Chocolate Base (5 minutes): In your large pot over medium-low heat, combine the milk and heavy cream. Whisk occasionally until it’s warm and starting to steam. Do not let it boil. Add the chocolate chips and whisk constantly until they are completely melted and the mixture is smooth.
  2. Bloom the Cocoa (2 minutes): In a small bowl, whisk the cocoa powder and sugar together. This prevents lumps. Once the chocolate is melted, slowly whisk in the cocoa-sugar mixture until fully incorporated. It will look a little grainy at first, but keep whisking.
  3. Simmer and Thicken (10 minutes): Turn the heat up to medium. Whisk constantly until the cocoa comes to a gentle simmer—you’ll see little bubbles around the edges. Don’t let it boil hard. Reduce the heat to low and let it simmer for 5-7 minutes, whisking every minute or so, until it has thickened slightly. It should coat the back of a spoon.
  4. Finish with Flavor (1 minute): Remove the pot from the heat. Stir in the vanilla extract and the pinch of sea salt. Taste it! This is your chance to adjust. Want it sweeter? Add a tablespoon of sugar. Want it more chocolaty? Stir in a few more chocolate chips until they melt.
  5. Transfer to Serving Vessel (2 minutes): Carefully pour the hot cocoa into your pre-warmed slow cooker. Set it to the “warm” setting. If you’re using a carafe, pour it in and seal it. The slow cooker is better for a party as people can serve themselves.
  6. Prepare the Toppings (15 minutes): While the cocoa is staying warm, get your toppings ready. Crush the candy canes in a sealed bag with a rolling pin. Whip your cream if making it from scratch. Toast the coconut flakes in a dry skillet over medium heat, stirring constantly, until they are golden and fragrant—this takes about 2-3 minutes. Arrange all your toppings in their bowls with small spoons or tongs.
  7. Set the Scene (5 minutes): Place the slow cooker or carafe at one end of your table or counter. Arrange the toppings in a row next to it. Put the mugs at the front. A little sign that says “Build Your Own Cocoa” is a nice, fun touch. I always put the cinnamon sticks and stirrers in a cute little cup right next to the mugs.

Notes

If your cocoa develops a skin on top while it’s sitting in the slow cooker, just give it a quick whisk before guests arrive. It will be perfectly smooth again. The cocoa base can be made a day ahead and stored in the fridge. Reheat gently on the stovetop or in the microwave.
