  • 1/3 cup buttermilk
  • 1 cup Honeycrisp apple, peeled and finely diced
  • 1/4 cup unsalted butter, melted (for coating)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Make the apple cider reduction: Pour 1 cup of apple cider into a small saucepan over medium-high heat. Bring to a boil, then reduce heat to medium-low and simmer until reduced to about 1/4 cup, roughly 10-12 minutes. Set aside to cool.
  2. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 2-3 minutes.
  5. Beat in eggs one at a time, then add vanilla extract and cooled apple cider reduction. Mix until just combined.
  6. With mixer on low, add dry ingredients in thirds, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.
  7. Gently fold in diced Honeycrisp apples with a rubber spatula until evenly distributed.
  8. Divide batter evenly among 12 muffin cups, filling each about three-quarters full.
  9. Bake for 15-18 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  10. Let muffins cool in tin for 5 minutes, then transfer to a cooling rack.
  11. While still warm, dip tops of muffins in melted butter, then roll in cinnamon-sugar mixture.
