Ingredients

  • Sharp cheddar cheese, 8 oz, cubed
  • Goat cheese log, 4 oz
  • Smoked gouda, 6 oz, sliced
  • Brie, 8 oz wheel
  • Salami, 6 oz, sliced
  • Prosciutto, 4 oz, thinly sliced
  • Pepperoni, 4 oz
  • Pretzel sticks, 2 cups
  • Marshmallows, 1 cup, assorted sizes
  • Candy corn, ½ cup
  • Chocolate chips or candy eyes, ¼ cup
  • Black olives, ½ cup, pitted
  • Red grapes, 1 cup
  • Apple slices, 1 apple, thinly sliced
  • Baby carrots, 1 cup
  • Cherry tomatoes, ½ cup
  • Assorted crackers, 2 cups
  • Breadsticks or grissini, 1 cup
  • Honey, ¼ cup
  • Pumpkin seed butter or almond butter, ¼ cup
  • Fresh rosemary sprigs, 2-3
  • Dried cranberries, ¼ cup
  • Edible flowers or autumn leaves (optional)

Instructions

  1. Prep your board (5 minutes): Place small bowls or ramekins on the board. Fill one with honey, one with pumpkin seed butter, one with candy corn, and one with black olives.
  2. Place the cheeses (3 minutes): Space out the brie wheel (center-left), goat cheese log (upper right), cheddar cubes (lower left), and smoked gouda slices (lower right).
  3. Add the meats (3 minutes): Fold or roll salami slices near the cheddar. Drape prosciutto in ribbons near the brie. Arrange pepperoni in a small pile near the center.
  4. Create your monster mash elements (5 minutes): Stick candy eyes or chocolate chips on marshmallows with honey. Arrange pretzel sticks as spider legs around olives or marshmallows. Make salami monsters with cheese eyes.
  5. Fill in with fruits and veggies (4 minutes): Scatter red grapes in clusters. Fan apple slices near cheddar. Place baby carrots in a pile. Tuck cherry tomatoes in gaps.
  6. Add the crunch (3 minutes): Arrange crackers and breadsticks in small groups around the board. Place breadsticks in a bundle at the edge.
  7. Garnish and finish (2 minutes): Sprinkle dried cranberries. Tuck rosemary sprigs between cheeses and fruits. Drizzle honey over brie and goat cheese.
  8. Final check (1 minute): Step back and fill any empty spots with extra crackers or grapes. Gently rearrange if needed.

Notes

Let cheese come to room temperature (about 30 minutes) before serving for best flavor. Avoid overcrowding the board. Balance sweet and salty elements. For a vegan version, use vegan cheeses, agave instead of honey, and plant-based meats. For gluten-free, use gluten-free crackers and pretzels.
