Ingredients

Scale
  • 1 large head of garlic
  • 1 medium broccoli crown, cut into florets (about 2 cups)
  • 1 medium red bell pepper, sliced into 1-inch strips
  • 2 large carrots, peeled and cut into sticks (or 1 cup baby carrots)
  • 1 medium zucchini, sliced into half-moons (optional)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ cup plain Greek yogurt (full-fat recommended)
  • ¼ cup mayonnaise
  • 1 tablespoon fresh chives, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • Optional: 1-2 drops green food coloring

Instructions

  1. Preheat oven to 400°F (200°C). Slice off the top ¼ inch of the garlic head to expose cloves. Drizzle with olive oil, wrap tightly in aluminum foil, and roast for 35-40 minutes until soft and golden.
  2. While garlic roasts, wash and chop vegetables into uniform sizes. In a large bowl, toss broccoli, bell pepper, carrots, and zucchini (if using) with olive oil, salt, black pepper, and smoked paprika.
  3. When garlic has about 15 minutes left, spread seasoned veggies in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly browned.
  4. In a small bowl, combine Greek yogurt, mayonnaise, chives, dill, parsley, garlic powder, onion powder, and lemon juice. Stir until smooth.
  5. Once roasted garlic is cool enough to handle, squeeze out the soft cloves (about 1-2 tablespoons), mash with a fork, and stir into the dip. Season with salt and pepper. Add green food coloring if desired.
  6. Arrange warm roasted veggies on a platter with the dip in the center. Serve immediately.

Notes

Roast the garlic whole for the best flavor—don’t rush this step. For even cooking, cut veggies uniformly. Full-fat Greek yogurt is recommended for a thick, creamy dip. The dip can be made up to 2 days ahead and tastes even better after the flavors meld.
