  • 1.5 lbs baby potatoes (Yukon Gold or red), washed and halved
  • 1 large bunch fresh kale (Lacinato or curly), stems removed and leaves chopped
  • 1 medium yellow onion, diced
  • 45 cloves garlic, minced
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • Salt and black pepper to taste
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp olive oil (for sautéing)

Instructions

  1. Prep your ingredients: Wash and halve baby potatoes. Dice onion, mince garlic, slice sausage into half-moons. Strip kale leaves from stems and roughly chop.
  2. Sauté for maximum flavor (optional but recommended): Heat 1 tbsp olive oil in a skillet over medium heat. Add sliced sausage and cook 3-4 minutes until browned. Transfer to slow cooker. In same skillet, add diced onion and cook 2 minutes until softened. Add minced garlic and cook 30 seconds until fragrant. Scrape into slow cooker.
  3. Layer in the slow cooker: Add halved baby potatoes to slow cooker with sausage and onions. Sprinkle dried thyme and rosemary over everything. Pour in 4 cups low-sodium chicken broth. Stir gently to combine.
  4. Slow cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until potatoes are fork-tender.
  5. Wilt the kale: About 20 minutes before serving, add chopped kale to slow cooker. Push down into hot broth, cover, and cook 15-20 minutes until wilted.
  6. Finish with cream: Just before serving, stir in heavy cream (or half-and-half) and optional red pepper flakes. Let heat through for 5 minutes. Taste and adjust seasoning with salt and pepper.
  7. Serve: Ladle into deep bowls. Enjoy on its own or with crusty bread.

Notes

For best flavor, brown the sausage and sauté the onions and garlic before adding to the slow cooker. Add kale only at the end to prevent it from becoming slimy. To thicken the broth, mash some cooked potatoes against the side of the slow cooker before adding cream. Use low-sodium broth and adjust salt at the end. For a dairy-free version, substitute heavy cream with full-fat canned coconut milk.
