Instructions

  1. Preheat oven to 350°F (175°C). Grease a small loaf pan (about 8×4 inches) or line with parchment paper, leaving overhang on the sides.
  2. Mash the banana in a medium mixing bowl until mostly smooth with a few small lumps (about ½ cup).
  3. Add pumpkin puree, melted coconut oil, brown sugar, granulated sugar, egg, and vanilla extract to the mashed banana. Whisk until smooth and well combined.
  4. In a separate small bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Pour dry ingredients into wet ingredients. Fold gently with a spatula until just combined—a few lumps are fine. If using nuts or chocolate chips, fold them in now.
  6. Pour batter into prepared loaf pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Let bread cool in pan for 10 minutes, then lift out using parchment overhang and transfer to a cooling rack. Cool for at least 20 minutes before slicing.

Notes

For best results, use an overripe banana with brown spots. If the top browns too quickly, tent with foil for the last 10 minutes. The flavor deepens after a day. Store at room temperature for up to 3 days or freeze individual slices for up to 3 months.
