  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 cup (240ml) apple cider, reduced down to about ½ cup (120ml)
  • ¼ cup (60ml) buttermilk (or dairy-free milk plus 1 teaspoon lemon juice)
  • ¼ cup (56g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • For the Maple Glaze:
  • 1 cup (120g) powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 12 tablespoons heavy cream or milk
  • A pinch of salt

Instructions

  1. Pour 1 cup (240ml) of apple cider into a small saucepan over medium heat. Simmer gently until reduced to about ½ cup (120ml), about 15-20 minutes. Set aside to cool.
  2. Preheat oven to 350°F (175°C). Lightly grease a 6-cavity donut pan with butter or non-stick spray.
  3. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. In a separate bowl, beat eggs with sugar until smooth and slightly pale. Add cooled reduced apple cider, buttermilk, melted butter, and vanilla extract. Stir gently until combined.
  5. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined; do not overmix.
  6. Fill donut pan cavities about ¾ full with batter. Bake for 12-15 minutes or until a toothpick inserted comes out clean.
  7. Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Whisk together powdered sugar, maple syrup, cream, and salt until smooth. Adjust consistency with more cream or sugar as needed.
  9. Dip the tops of cooled donuts into the glaze and place back on the rack. Let glaze set for at least 15 minutes before serving.

Notes

Reduce the apple cider to concentrate flavor and prevent soggy batter. Avoid overmixing the batter to keep donuts tender. Donuts must be completely cool before glazing to prevent glaze from sliding off. Store glazed donuts in an airtight container at room temperature for up to two days. For longer storage, freeze unglazed donuts and glaze after thawing. Vegan and gluten-free substitutions are possible.
