Cozy Spider Web Fudge Brownies with Perfect Chocolate Ganache

These fudgy brownies topped with silky chocolate ganache and a spider web design are perfect for Halloween parties or a cozy night in. Quick and easy to make with simple ingredients, they look impressive but are surprisingly forgiving.

  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup semi-sweet chocolate chips
  • ½ cup sweetened condensed milk
  • 2 tablespoons unsalted butter
  • ¼ teaspoon vanilla extract
  • ¼ cup white chocolate chips
  • 1 teaspoon coconut oil or vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides. Lightly grease the parchment.
  2. In a large bowl, whisk together melted butter and sugar until well combined. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  3. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder. Gradually add dry ingredients to wet mixture, folding gently with a spatula until just combined. Do not overmix.
  4. Pour batter into prepared pan and spread evenly. Bake for 20-25 minutes, until a toothpick inserted in center comes out with a few moist crumbs. Cool completely in pan on a wire rack (about 45 minutes to 1 hour).
  5. For the ganache: In a small saucepan over low heat, combine chocolate chips, sweetened condensed milk, and butter. Stir constantly until melted and smooth. Remove from heat and stir in vanilla. Let cool for about 5 minutes.
  6. Pour warm ganache over cooled brownies and spread evenly. Let set for 10 minutes.
  7. For the spider web: Melt white chocolate chips with coconut oil in a microwave-safe bowl in 20-second bursts, stirring between each, until smooth. Transfer to a small zip-top bag and snip off a tiny corner. Pipe concentric circles onto the ganache, starting from center and working outward, spaced about 1 inch apart.
  8. Using a toothpick or skewer, drag from the center outward through the circles to create the web pattern. Wipe toothpick clean after each drag. Repeat all the way around.
  9. Refrigerate brownies for at least 30 minutes to set the ganache. Lift out using parchment overhang, slice into squares with a sharp knife, wiping blade clean between cuts.

Notes

Don’t skip cooling the brownies completely before adding ganache, or it will soak in. For clean slices, chill for at least 1 hour before cutting. The brownies taste even better the next day. For dairy-free, use vegan butter and dairy-free chocolate chips. For gluten-free, use a 1:1 gluten-free baking flour blend.
