This cozy three-bean turkey chili is a one-pot wonder that’s hearty, warm, and filled with three types of beans. It’s the perfect comfort food for busy weeknights, and it tastes even better the next day.

  • 1 lb (450g) lean ground turkey (93% lean)
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 can (15 oz / 425g) kidney beans, drained and rinsed
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 can (15 oz / 425g) pinto beans, drained and rinsed
  • 1 can (28 oz / 800g) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup (240ml) low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the oil: Place your Dutch oven over medium-high heat. Add the olive oil and let it shimmer for about 30 seconds.
  2. Cook the turkey: Add the ground turkey to the pot. Break it up with your wooden spoon into small crumbles. Cook for 5-7 minutes, stirring occasionally, until it’s no longer pink. Season with a pinch of salt and pepper.
  3. Sauté the aromatics: Push the turkey to one side of the pot. Add the diced onion and red bell pepper. Cook for 4-5 minutes until softened. Stir occasionally, scraping up any browned bits from the bottom. Add the minced garlic and cook for 1 more minute until fragrant.
  4. Bloom the spices: Add the chili powder, cumin, smoked paprika, and dried oregano. Stir everything together and cook for 1 minute.
  5. Add the tomato paste: Stir in the tomato paste and cook for 2 minutes. It will darken slightly and smell richer.
  6. Pour in the liquids: Add the crushed tomatoes and chicken broth. Stir well to combine, scraping the bottom of the pot to release any stuck-on bits.
  7. Add the beans: Gently stir in the drained and rinsed kidney beans, black beans, and pinto beans.
  8. Simmer: Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot with the lid slightly ajar. Let it simmer for 45 minutes to 1 hour. Stir occasionally to prevent sticking.
  9. Taste and adjust: After simmering, taste the chili. Add more salt, pepper, or a pinch of cayenne if you want heat.
  10. Rest: Turn off the heat and let the chili sit for 10 minutes before serving.

Notes

This chili tastes even better the next day. For a thicker chili, mash some of the beans against the side of the pot. For a vegetarian version, skip the turkey and add an extra can of beans, using vegetable broth instead of chicken broth.
