This no-bake Creamy Caramel Apple Cheesecake Dip with Toffee Bits comes together in just five minutes. It’s the perfect last-minute dessert for fall gatherings, movie nights, or any time you need a sweet treat without turning on the oven.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • ¼ cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons heavy cream
  • ¼ cup caramel sauce (store-bought or homemade), plus more for drizzling
  • ⅓ cup toffee bits, plus extra for garnish
  • 23 large apples (Honeycrisp or Granny Smith recommended), for dipping
  • 1 tablespoon lemon juice (to prevent apple browning)

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 20 minutes before starting. If forgotten, cut into small cubes and microwave on low power for 10-15 seconds until soft but not melted.
  2. Beat the cream cheese: Place softened cream cheese in a medium mixing bowl. Beat with a hand mixer on medium speed for about 1 minute until smooth and fluffy. Scrape down sides with a spatula.
  3. Add the powdered sugar: Sift ¼ cup powdered sugar over the cream cheese. Beat on low speed until incorporated, then increase to medium and beat for another 30 seconds until light and airy.
  4. Mix in the vanilla and cream: Add 1 teaspoon vanilla extract and 2 tablespoons heavy cream. Beat on medium speed for about 30 seconds until combined and silky. If too thick, add another tablespoon of cream.
  5. Fold in the caramel and toffee: Gently fold in ¼ cup caramel sauce and ⅓ cup toffee bits using a spatula. Do not overmix; you want ribbons of caramel throughout.
  6. Transfer to serving bowl: Spoon the dip into a serving bowl and spread evenly. Drizzle extra caramel sauce on top (about 2 tablespoons) in a zigzag pattern. Sprinkle with a generous tablespoon of toffee bits.
  7. Prepare the apples: Core and slice apples into wedges. Toss with 1 tablespoon lemon juice to prevent browning. Arrange around the dip on a platter.
  8. Serve immediately or chill: Serve right away, or cover and refrigerate for up to 2 hours. If chilled, let sit at room temperature for 10 minutes before serving.

Notes

For best results, use full-fat cream cheese and let it come to room temperature. To prevent apple browning, toss slices with lemon juice. The dip can be made up to 24 hours ahead; store covered in the fridge and let sit at room temperature for 10 minutes before serving. Do not freeze.
