  • 1 pound ground beef (80/20 works best)
  • 4 cups russet potatoes, peeled and diced into 1-inch cubes
  • 1 block (8 ounces) cream cheese, softened and cut into cubes
  • 2 cups sharp cheddar cheese, shredded
  • 4 cups low-sodium beef broth
  • 1 small yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • Optional toppings: crispy bacon bits, chopped green onions, extra shredded cheddar, pickled jalapeños

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned (6-8 minutes). Drain excess fat, leaving about 1 tablespoon. Add diced onion and minced garlic; cook 2 minutes until onion is soft.
  2. Prep the potatoes: While beef browns, peel and dice potatoes into 1-inch cubes. Rinse in cold water to remove excess starch.
  3. Layer in slow cooker: Add browned beef mixture to bottom of crockpot. Top with diced potatoes. Pour in beef broth, then add salt, pepper, and smoked paprika. Do not stir.
  4. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours, until potatoes are fork-tender.
  5. Add cream cheese: About 30 minutes before serving, add cream cheese cubes to slow cooker. Stir gently until melted and incorporated. For extra creaminess, use an immersion blender briefly.
  6. Add cheddar: Stir in shredded cheddar cheese until fully melted. Do not boil after adding cheese. Taste and adjust seasoning.
  7. Serve immediately: Ladle into bowls and top with desired garnishes.

Notes

For creamiest results, use full-fat cream cheese. Add dairy in the last 30 minutes on low to prevent graininess. If soup is too thick, stir in warm broth or milk. If too thin, cook uncovered on low for 15-20 minutes. Soup tastes even better the next day. Freezes well for up to 3 months.
