  • 1 cup (90g) rolled oats (old-fashioned)
  • ¾ cup (180ml) unsweetened almond milk
  • ½ cup (120g) plain cottage cheese (small-curd)
  • 1 scoop (about 30g) chocolate protein powder
  • 1 tablespoon (5g) unsweetened cocoa powder
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of sea salt
  • For topping: extra peanut butter, dark chocolate chips, chopped peanuts (optional)

Instructions

  1. In a blender, combine the almond milk and cottage cheese. Blend on high for about 30 seconds until completely smooth and no white specks remain.
  2. Add the chocolate protein powder, cocoa powder, maple syrup, and pinch of salt to the blender. Blend again for 15 seconds until combined. The mixture will look like a thin chocolate milkshake.
  3. In a large mixing bowl, add the rolled oats and chia seeds. Pour the chocolate milk mixture over the top and stir with a spatula until every oat is coated.
  4. Divide the oat mixture evenly between four 8-ounce jars (about ½ cup per jar). Leave a little space at the top.
  5. Drop half a tablespoon of peanut butter into each jar. Do not stir it in yet.
  6. Seal the jars with lids and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the jar to incorporate the peanut butter. If too thick, add a splash of milk. Top with extra peanut butter, chocolate chips, or chopped peanuts. Serve cold or microwave for 45 seconds if desired.

Notes

Don’t skip blending the cottage cheese—it ensures a creamy texture. For best results, let the oats soak 8-12 hours. If using sweetened protein powder, reduce or omit the maple syrup. Store in the fridge for up to 4 days; do not freeze.
