  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil preferred)
  • 1 cup chicken broth (low sodium)
  • 1 cup heavy cream (full-fat) or cream cheese for a tangier twist
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, chopped (for garnish)
  • Red pepper flakes (optional)

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil over medium-high heat in a large skillet until shimmering. Add chicken thighs skin-side down and cook without moving for 6-8 minutes until skin is golden and crisp. Flip and cook for another 4-5 minutes. Transfer chicken to a plate and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Stir constantly for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Pour in chicken broth to deglaze the pan, scraping browned bits off the bottom. Let simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and grated Parmesan cheese. Simmer gently, stirring often, until sauce thickens and coats the back of a spoon, about 5 minutes. Add more broth if sauce is too thick.
  6. Return chicken thighs to the pan, skin side up. Spoon sauce over chicken. Cover loosely and simmer on low for 10-12 minutes until chicken is cooked through (internal temperature 165°F).
  7. Sprinkle chopped fresh basil and red pepper flakes if desired. Let rest off heat for a couple of minutes before serving.

Notes

Use bone-in, skin-on chicken thighs for best flavor and crispiness. Warm cream to room temperature before adding to prevent curdling. Keep heat low when simmering sauce. For gluten-free, use cornstarch or arrowroot powder instead of flour if thickening is needed. Dairy-free alternative: substitute heavy cream with canned coconut milk and Parmesan with nutritional yeast.
