  • 1/2 cup (120 ml) unsweetened almond milk
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (16g) powdered peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15 ml) maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a mason jar or airtight container, add the rolled oats, powdered peanut butter, vanilla protein powder, chia seeds, and a pinch of salt. Stir to break up any clumps.
  2. Add the wet ingredients: Pour in the almond milk, Greek yogurt, maple syrup, and vanilla extract. Do not stir yet.
  3. Mix thoroughly: Stir everything together with a spoon or small whisk until no dry pockets remain. The mixture should be thick and creamy. Adjust with a splash more milk if too thick, or a few more oats if too thin.
  4. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. Check consistency in the morning: Stir the oats. They should be soft, creamy, and thick but spoonable. If too thick, stir in 1-2 tablespoons of milk.
  6. Add toppings: Drizzle with peanut butter, sprinkle cinnamon, and add sliced banana, chopped apples, or nuts. Enjoy cold or at room temperature.

Notes

For best results, use rolled oats (not instant or steel-cut). Powdered peanut butter is key for intense flavor without greasiness. Toppings should be added fresh just before serving. The oats keep in the fridge for up to 4 days.
