  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) chocolate or vanilla protein powder
  • 1/2 cup (120ml) unsweetened almond milk
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • Optional toppings: sliced banana, chopped peanuts, dark chocolate chips, extra peanut butter drizzle, fresh berries

Instructions

  1. In a mason jar or airtight container, combine the dry ingredients: 1/2 cup rolled oats, 1 scoop protein powder, and 1 tablespoon chia seeds (if using). Stir to break up any clumps.
  2. Add the wet ingredients: 1/2 cup unsweetened almond milk, 1/4 cup plain Greek yogurt, 2 tablespoons creamy peanut butter, and 1 tablespoon maple syrup. Do not stir yet.
  3. Mix thoroughly with a spoon or small whisk, scraping the bottom and corners of the jar until the peanut butter is fully incorporated and the mixture is thick and uniform.
  4. Add a tiny pinch of salt and stir once more.
  5. Seal the jar tightly and refrigerate for at least 6 hours, preferably overnight (8–12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk (1–2 tablespoons) to reach desired consistency.
  7. Add desired toppings (e.g., sliced banana, chopped peanuts, chocolate chips, extra peanut butter) and serve cold or microwave for 30–60 seconds if preferred warm.

Notes

For best results, use natural peanut butter (no added sugar) and rolled oats (not quick oats). Mix protein powder with dry oats first to prevent clumps. Let the oats sit for the full 8 hours for creamiest texture. Store in the refrigerator for up to 5 days; do not freeze. Adjust sweetness based on your protein powder.
