Thick, creamy overnight oats loaded with protein and peanut butter flavor. Perfect for meal prep, these oats are a nostalgic and satisfying breakfast that can be made ahead and enjoyed all week.

Ingredients

Scale
  • ½ cup (50g) rolled oats
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt
  • ½ cup (120ml) milk of your choice (e.g., unsweetened almond milk)
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) maple syrup or honey
  • Optional toppings: sliced bananas, chopped peanuts, extra peanut butter drizzle, dark chocolate chips, fresh berries

Instructions

  1. In a jar or airtight container, combine the rolled oats, protein powder, chia seeds (if using), and a pinch of salt. Stir with a fork to break up any clumps.
  2. Add the milk, Greek yogurt, peanut butter, and maple syrup or honey. Stir thoroughly until completely combined, scraping the bottom and sides of the jar.
  3. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  4. In the morning, stir the oats well. If too thick, add a splash of milk to reach desired consistency.
  5. Add desired toppings and enjoy cold, or microwave for 30-60 seconds if you prefer warm oats.

Notes

Use rolled oats, not quick or steel-cut. Adjust liquid based on your protein powder (plant-based may need more milk). Taste before adding sweetener as some peanut butters and protein powders are already sweet. Store in fridge for up to 5 days; add toppings just before serving. For vegan version, use plant-based milk, dairy-free yogurt, and maple syrup.
