A creamy, no-cook breakfast made with rolled oats, ripe banana, and peanut butter. Perfect for meal prep, this easy recipe delivers a rich, pudding-like texture with natural sweetness and a protein boost.

  • 1 cup (240ml) milk (any kind)
  • ½ cup (120g) plain Greek yogurt
  • 1 medium ripe banana
  • 3 tablespoons (48g) creamy peanut butter
  • 12 tablespoons (15-30ml) maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a medium mixing bowl, mash the ripe banana with a fork until mostly smooth.
  2. Add the milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir well until all oats are coated and no dry patches remain.
  4. Divide the mixture evenly into mason jars or airtight containers, leaving about half an inch of space at the top.
  5. Seal the containers and refrigerate for at least 6 hours, preferably 8-12 hours (overnight).
  6. Serve cold or warm (microwave for 45-60 seconds, removing the metal lid first). Stir well before eating.
  7. Top with sliced banana, extra peanut butter, chopped peanuts, or chocolate chips as desired.

Notes

Use a very ripe banana (with brown spots) for best sweetness and creaminess. If oats are too thick in the morning, stir in a tablespoon or two of milk. If too thin, add extra yogurt or peanut butter. For best texture, let sit a full 12 hours. Store in the refrigerator for up to 5 days; do not freeze.
