These creamy peanut butter overnight protein oats are a quick, no-cook breakfast that tastes like a peanut butter cup in a bowl. With simple ingredients and five minutes of prep, you’ll have a delicious, protein-packed meal ready when you wake up.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk of choice (whole, oat, or almond)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 scoop (about 30g) vanilla protein powder
  • 3 tablespoons (48g) creamy peanut butter
  • 12 tablespoons (15-30ml) maple syrup
  • 1 tablespoon (15g) chia seeds
  • Pinch of sea salt
  • Optional toppings: chopped peanuts, dark chocolate chips, sliced banana, extra peanut butter drizzle, cinnamon

Instructions

  1. In a small bowl, mix the vanilla protein powder with 1/4 cup (60ml) of the milk. Whisk until smooth and lump-free.
  2. Add the remaining 3/4 cup (180ml) milk and Greek yogurt. Whisk until completely smooth and uniform.
  3. Stir in the peanut butter and maple syrup. Whisk until fully incorporated.
  4. Add the rolled oats and chia seeds. Stir until all oats are coated and submerged.
  5. Divide the mixture evenly into mason jars or airtight containers. Seal and refrigerate for at least 6 hours, preferably 8-12 hours.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Add desired toppings and enjoy cold or microwave for 30-45 seconds for warm oats.

Notes

For best results, mix protein powder with a small amount of liquid first to avoid clumps. Use room temperature ingredients for smoother mixing. The flavors develop and improve after 2-3 days in the fridge. Store without toppings for up to 5 days.
