Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (15 ounces) white corn, drained
  • 1 can (4 ounces) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup heavy cream or half-and-half
  • Juice of 1 lime
  • Fresh cilantro, chopped (for topping)
  • Shredded Monterey Jack cheese (for topping)
  • Diced avocado (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Tortilla chips or strips (for topping)
  • Sliced jalapeños (for topping)

Instructions

  1. Prep your ingredients: drain and rinse white beans, drain corn and green chiles. Pat chicken breasts dry.
  2. Layer everything in the slow cooker: place chicken breasts in the bottom, then add beans, corn, and green chiles. Sprinkle cumin, garlic powder, onion powder, oregano, salt, and pepper on top.
  3. Pour chicken broth gently over the ingredients. The liquid should just barely cover the chicken and beans.
  4. Cook on LOW for 4-6 hours or on HIGH for 2-3 hours until chicken is cooked through and shreds easily.
  5. Remove chicken from slow cooker and shred using two forks or a hand mixer. Return shredded chicken to the slow cooker and stir.
  6. In a small bowl, combine softened cream cheese and heavy cream until smooth. Stir into the slow cooker along with lime juice. Cook for another 10-15 minutes on LOW until thickened.
  7. Taste and adjust seasoning with more salt, cumin, or lime juice as needed.
  8. Serve hot with desired toppings.

Notes

Sear chicken first for deeper flavor. Add cream cheese at the end to prevent curdling. To thicken, remove lid for last 30 minutes or mash some beans. Use low-sodium broth and rinse beans to control salt.
