Creamy Spiced Peach Butter with Cardamom and Vanilla

A luscious homemade peach butter infused with warm cardamom and rich vanilla, perfect for spreading on toast or stirring into yogurt. This creamy, aromatic spread is easy to make and ideal for gifting or enjoying as a cozy treat.

  • 3 pounds fresh peaches, peeled, pitted, and sliced
  • 1 cup granulated sugar
  • 1 teaspoon ground cardamom
  • 1 tablespoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon cinnamon (optional)
  • Pinch of salt

Instructions

  1. Peel peaches by blanching in boiling water for 30–60 seconds, then plunge into ice water; skins will slip off easily. Pit and slice peaches.
  2. In a large heavy-bottomed pot, combine sliced peaches, sugar, ground cardamom, vanilla extract, lemon juice, cinnamon (if using), and salt.
  3. Bring mixture to a boil over medium heat, then reduce to low and simmer uncovered, stirring every 5 minutes to prevent sticking and burning, for 45–60 minutes until peaches break down and mixture thickens.
  4. Use an immersion blender to puree the mixture directly in the pot until smooth and creamy. If using a regular blender, blend in batches carefully and return to pot.
  5. Optional: Simmer pureed mixture for an additional 10–15 minutes to thicken further, stirring frequently until spreadable but not dry.
  6. Let peach butter cool slightly, then spoon into sterilized glass jars. Seal and refrigerate. Keeps up to 3 weeks in the fridge or can be frozen for longer storage.

Notes

Use ripe, fragrant peaches for best flavor. Stir frequently during simmering to prevent scorching. For a thicker butter, simmer longer after blending. Can substitute cardamom with ginger or nutmeg. Reduce sugar for a lower-sugar version and consider adding powdered pectin to thicken. Frozen peaches can be used but may require longer cooking.
