Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1.5 pounds total)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil (or oil from sun-dried tomato jar)
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup heavy cream
  • ½ cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 3 cups fresh spinach
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Prep the chicken: Pat chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, and Italian seasoning. Let sit at room temperature for 10 minutes if time allows.
  2. Sear the chicken: Heat a large skillet over medium-high heat and add olive oil. When shimmering, place chicken in the pan. Cook undisturbed for 4-5 minutes until deep golden brown. Flip and cook for another 3-4 minutes until cooked through (165°F internal temp). Transfer to a plate and tent with foil.
  3. Sauté the aromatics: Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and chopped sun-dried tomatoes. Stir for about 1 minute until fragrant. Add red pepper flakes if using. Scrape up any browned bits from the pan bottom.
  4. Build the sauce: Pour in chicken broth and deglaze the pan, scraping up all bits. Simmer for 1 minute. Slowly pour in heavy cream while stirring. Bring to a gentle simmer (not a rolling boil) and let bubble for 2 minutes until slightly thickened.
  5. Add cheese and spinach: Reduce heat to low. Gradually sprinkle in grated Parmesan, stirring constantly until melted and smooth. Add spinach in handfuls, stirring until each batch wilts before adding more (about 1-2 minutes total). Sauce should coat the back of a spoon.
  6. Finish the dish: Return chicken to the skillet, nestling into the sauce. Spoon sauce over the top. Simmer on low for 2-3 minutes to heat through and let chicken absorb flavors.
  7. Rest and serve: Remove from heat and let rest for 2-3 minutes. Garnish with fresh basil or parsley and serve immediately.

Notes

Don’t skip the oil trick: use oil from the sun-dried tomato jar for searing to infuse flavor. Watch heat with cream to prevent curdling—keep at medium-low. Grate your own Parmesan for a smooth sauce. If sauce is too thin, simmer a few extra minutes; if too thick, add a splash of broth or cream. Add spinach handful by handful to avoid a waterlogged clump.
