Crunchy potato wedges with crispy bacon bits and a flavorful ranch seasoning, cooked to perfection in the air fryer for a quick and easy summer BBQ side.

  • 4 large russet potatoes (about 2 lbs or 900 g), scrubbed and cut into thick wedges
  • 2 tablespoons olive oil
  • 4 slices bacon, cooked crisp and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1 teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 2 tablespoons ranch seasoning mix

Instructions

  1. Wash and cut 4 large russet potatoes into thick wedges about ½ inch thick.
  2. Optional: Parboil the wedges in salted water for 7-8 minutes until just tender. Drain and dry thoroughly.
  3. Cook 4 slices of bacon until crisp, drain on paper towels, then crumble into small pieces.
  4. In a large mixing bowl, toss the dried potato wedges with 2 tablespoons olive oil.
  5. Sprinkle the bacon-ranch seasoning blend evenly over the wedges and toss to coat thoroughly.
  6. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  7. Arrange wedges in a single layer in the air fryer basket without overcrowding.
  8. Cook for 10 minutes, then flip wedges with tongs and cook for another 10-12 minutes until golden brown and crispy.
  9. Transfer hot wedges to a serving bowl and immediately toss with crumbled bacon bits.
  10. Optionally garnish with fresh chopped parsley or extra ranch powder before serving.

Notes

Parboiling the wedges is optional but recommended for a creamy interior and crispy exterior. Dry wedges thoroughly after boiling to avoid sogginess. Cook bacon separately and toss on last to keep it crispy. Do not overcrowd the air fryer basket. Flip wedges halfway through cooking for even crispness. For a dairy-free version, use a dairy-free ranch seasoning blend. Leftovers reheat best in the air fryer at 350°F for 5-7 minutes.
