  • 1 cup sharp cheddar cheese, shredded
  • 1 pound thin-cut bacon
  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven.
  2. Pre-cook the bacon: Lay bacon strips on a microwave-safe plate lined with paper towels. Cook for 2-3 minutes until partially cooked but still flexible. Alternatively, cook in a skillet over medium heat for 2 minutes per side. Drain on paper towels and let cool.
  3. Prepare the jalapeños: Wearing gloves, cut each jalapeño in half lengthwise. Use a small spoon to scrape out seeds and white membranes. You should have 24-30 pepper halves.
  4. Make the filling: In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, and a pinch of black pepper. Mix until smooth.
  5. Fill the peppers: Spoon or pipe the cream cheese mixture into each jalapeño half, level with the cut edge.
  6. Wrap with bacon: Cut each pre-cooked bacon strip in half crosswise. Wrap one half-strip around the middle of each stuffed pepper half, covering the filling. Secure with a toothpick pushed through both sides of the bacon into the pepper.
  7. Arrange on a wire rack set inside a baking sheet, spacing them about an inch apart.
  8. Bake for 18-22 minutes, until bacon is golden and crispy, peppers are tender, and filling is hot and bubbly. Start checking at 15 minutes.
  9. Let the bites cool on the rack for about 5 minutes before serving.
  10. Remove toothpicks and serve warm.

Pre-cooking the bacon is essential for crispiness. Wear gloves when handling jalapeños. Soak toothpicks in water for 10 minutes to prevent burning. For a milder version, use mini sweet peppers instead of jalapeños. For an air fryer method, cook at 375°F for 10-12 minutes, flipping halfway through.
