  • 1/2 cup hot sauce (preferably Frank’s RedHot)
  • 1/4 cup unsalted butter, melted (use vegan butter if needed)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Worcestershire sauce (or soy sauce for vegan version)
  • Pinch of garlic powder
  • Ranch dressing or blue cheese dressing (for serving)
  • Celery sticks and carrot sticks (for serving)
  • Fresh chives or parsley, chopped (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper. If you have a cooling rack, place it on the baking sheet and spray with non-stick spray.
  2. Wash the cauliflower and cut into bite-sized florets. Pat them dry thoroughly with a clean towel or paper towels.
  3. In a large bowl, whisk together flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in the water while whisking continuously until smooth (consistency of thin pancake batter).
  4. Add the dried florets to the batter and toss gently until evenly coated. Let them sit in the batter for about 2 minutes.
  5. Using tongs, lift each piece out of the batter, letting excess drip off, and place on the prepared baking sheet. Ensure pieces are not touching.
  6. Bake for 20 minutes. Remove from oven, carefully flip each piece, and bake for another 10-15 minutes until golden brown and crispy (total 30-35 minutes).
  7. While cauliflower bakes, make the buffalo sauce: In a small saucepan over low heat, combine hot sauce, melted butter, honey, Worcestershire sauce, and garlic powder. Whisk until smooth and heated through. Alternatively, microwave for 30 seconds and stir.
  8. Once cauliflower is baked, transfer to a large bowl. Pour warm buffalo sauce over and gently toss until every piece is coated.
  9. Serve immediately with ranch or blue cheese dressing, celery and carrot sticks, and chopped chives or parsley.

For extra crispiness, ensure cauliflower is thoroughly dried before battering. Do not skip the cornstarch—it’s key for crunch.
