  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 34 garlic cloves, minced
  • 1/4 cup honey (85g)
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to ensure crispiness.
  3. Rub the chicken all over with olive oil, then season generously with salt and black pepper on both sides.
  4. Arrange the thighs skin-side up on a wire rack set over a rimmed baking sheet. If you don’t have a rack, place them directly on a foil-lined baking sheet but flip halfway through baking for even browning.
  5. Bake uncovered for 25 minutes until the skin turns golden and crisp.
  6. While the chicken bakes, prepare the glaze: In a small saucepan, combine minced garlic, honey, soy sauce, apple cider vinegar, and red pepper flakes (if using). Warm over low heat for 3-5 minutes until fragrant and slightly thickened, stirring often.
  7. After 25 minutes, brush the glaze generously over each chicken thigh. Return to oven and bake for another 10-12 minutes until the glaze bubbles and caramelizes.
  8. Check the internal temperature with a meat thermometer; it should read 165°F (74°C) when done. If unavailable, pierce the thickest part—juices should run clear.
  9. Remove from oven and let rest for 5 minutes to allow juices to redistribute.
  10. Garnish with chopped fresh parsley before serving.
