  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to remove excess moisture.
  3. Season the chicken thighs generously on both sides with salt and pepper.
  4. In a small bowl, combine melted butter, minced garlic, lemon zest, chopped thyme, rosemary, and a squeeze of lemon juice. Stir well to blend.
  5. Heat olive oil in a skillet or baking dish over medium-high heat. Once shimmering, place the chicken thighs skin-side down and sear without moving for 4-5 minutes until the skin is golden and crisp. If not using a skillet, skip this step.
