  • 3 medium zucchinis, grated and squeezed dry
  • ½ cup finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • ⅓ cup all-purpose flour (can substitute almond flour for gluten-free)
  • 2 large eggs, at room temperature
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh chives
  • Salt and pepper, to taste
  • Olive oil, for frying
  • For the Garlic Herb Yogurt Dip:
  • 1 cup Greek yogurt (or dairy-free coconut yogurt)
  • 1 garlic clove, minced
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh herbs (parsley, dill, or chives)
  • Salt and pepper, to taste

Instructions

  1. Grate the zucchinis using a box grater or food processor (about 3 cups).
  2. Place grated zucchini in a clean kitchen towel and wring out as much liquid as possible.
  3. In a large bowl, combine squeezed zucchini, Parmesan, flour, beaten eggs, minced garlic, parsley, chives, salt, and pepper. Mix until well combined and thick but scoopable.
  4. Heat 2-3 tablespoons of olive oil in a non-stick or cast iron skillet over medium heat until shimmering (about 3 minutes).
  5. Scoop about 2 tablespoons of batter per fritter and flatten gently into discs.
  6. Fry fritters in batches, cooking each side for 3-4 minutes until golden brown and crispy. Avoid overcrowding the pan.
  7. Transfer cooked fritters to a plate lined with paper towels to drain excess oil. Keep warm in a low oven (200°F / 93°C) while cooking remaining fritters.
  8. Prepare the garlic herb yogurt dip by mixing Greek yogurt, minced garlic, lemon juice, chopped herbs, salt, and pepper in a small bowl. Chill until serving.
  9. Serve fritters warm with a dollop of garlic herb yogurt dip.

Squeezing out zucchini moisture is crucial for crispiness. Use fresh Parmesan cheese for best flavor and melting. Fry on medium heat to avoid burning or rubbery texture.
