These easy peanut butter banana freezer muffins are made with just five simple ingredients and come together in about 30 minutes. They’re perfect for meal prep, freeze beautifully, and are a crowd-pleasing breakfast or snack.

  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C). Line your muffin tin with paper liners or grease it well.
  2. In a large mixing bowl, mash the bananas with a fork or potato masher until mostly smooth.
  3. Add the peanut butter, eggs, and honey (or maple syrup) to the mashed bananas. Stir until well combined.
  4. Fold in the rolled oats until evenly distributed. The batter will be thick and spoonable.
  5. Divide the batter evenly among 12 muffin cups, filling each about three-quarters full.
  6. Bake for 15-18 minutes, until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for best sweetness and moisture. Don’t overmix the batter. Let the batter rest for 5 minutes before baking to allow oats to absorb moisture. For freezing, cool completely and store in a freezer-safe bag for up to 3 months. Reheat in microwave for 20-30 seconds.
