A simple yet elegant fall cocktail made with just apple cider, champagne, and a cinnamon sugar rim. Perfect for brunch, Thanksgiving, or any celebration.

Instructions

  1. Prepare the cinnamon sugar mixture: In a small shallow dish, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Stir with a fork until evenly mixed.
  2. Prepare the sticky rim: Pour 1 tablespoon honey or maple syrup into another small shallow dish. If the honey is too thick, microwave for 5 seconds to loosen.
  3. Rim the glasses: Dip the rim of a champagne flute into the honey, rotating gently to coat about 1/4 inch. Let excess drip off, then dip into the cinnamon sugar mixture, twisting gently to coat evenly. Tap off loose sugar. Repeat for all glasses.
  4. Chill the glasses (optional): Place rimmed glasses in the fridge for 5-10 minutes to set the rim.
  5. Add ice (if using): Fill each glass about halfway with ice (crushed or cubes). For the classic version, skip the ice.
  6. Pour the apple cider: Fill each glass about 2/3 full with chilled apple cider (about 4 ounces per standard flute).
  7. Top with champagne: Slowly pour chilled champagne over the back of a spoon to preserve bubbles, filling to about 1/2 inch from the rim.
  8. Stir gently: Use a long spoon or chopstick to give one or two gentle stirs. Do not overmix.
  9. Garnish and serve: Add a thin apple slice on the rim, a cinnamon stick, or a rosemary sprig. Serve immediately.

Notes

Chill all ingredients and glasses overnight for best results. Use dry brut champagne to balance the sweetness of the cider. The cinnamon sugar rim is essential for flavor. For a non-alcoholic version, substitute sparkling apple cider or ginger ale. For a spiked version, add 1 ounce bourbon or whiskey.
