These copycat Turkey Cheese Cracker Stackers bring back that same satisfying crunch and creamy texture without the plastic waste or the weird preservatives. Quick to make, endlessly customizable, and taste way better than anything from a plastic tray.

Ingredients

  • Mini round crackers (like Ritz or Club crackers) — about 24 crackers per serving
  • Whole wheat or gluten-free crackers as an alternative
  • Cheddar cheese block, sliced into ÂĽ-inch thick squares (about 2 ounces per serving)
  • Colby Jack or Swiss cheese for a milder taste
  • Pre-sliced cheese squares work in a pinch
  • Oven-roasted turkey breast, thinly sliced (about 4 ounces per serving)
  • Honey ham or roast beef as an alternative
  • Dijon mustard or honey mustard for a little tang
  • Fresh apple slices or grapes on the side for a sweet contrast
  • A sprinkle of everything bagel seasoning for extra crunch
  • Small pickle slices for a briny pop of flavor

Instructions

  1. Prep your ingredients (5 minutes): Take your cheese block and slice it into ÂĽ-inch thick squares. Aim for pieces that are roughly the same size as your crackers — about 1½ inches across. If you’re using a cookie cutter, press it firmly into the cheese and wiggle it slightly to release. For the turkey, lay the slices flat on your cutting board and cut them into squares or rectangles that match the cracker size.
  2. Set up your assembly station (2 minutes): Lay out a sheet of parchment paper on your counter. Arrange your crackers in rows, leaving about an inch of space between each one. I like to set up about 24 crackers at a time — that’s enough for one full serving.
  3. Build the first layer (3 minutes): Place one piece of turkey on top of each cracker. Press it down gently so it sticks to the cracker surface. The turkey should cover most of the cracker, but a little overhang is fine.
  4. Add the cheese layer (2 minutes): Place a cheese square on top of the turkey. Center it as best you can. The cheese should sit flat and stable. Aim for that ÂĽ-inch thickness.
  5. Top with the second cracker (2 minutes): Gently press a second cracker on top of the cheese, creating a sandwich. Don’t squish it too hard or the cracker might break. Repeat until all stackers are assembled.
  6. Optional: Add a spread (1 minute): If you’re using mustard or honey, spread a tiny amount (about ÂĽ teaspoon) on the inside of one cracker before adding the turkey.
  7. Chill before serving (10 minutes): Place your assembled stackers in a single layer in an airtight container, separated by pieces of parchment paper. Pop them in the fridge for at least 10 minutes before serving.
  8. Serve and enjoy (0 minutes): Arrange your stackers on a plate or pack them directly into lunchboxes. They’re ready to eat as soon as they’re chilled.

Notes

Keep ingredients cold for easier slicing. Don’t overstack. Use sturdy crackers like Ritz or Club. For best texture, store components separately and assemble fresh. These stackers are best served cold or at room temperature. They’ll stay fresh in the refrigerator for up to 3 days in an airtight container.
