This creamy, spicy, and cheesy buffalo chicken dip is the ultimate crowd-pleaser for game day or any party. Made with simple ingredients in a slow cooker, it’s quick to prepare and always a hit.

  • 2 (12.5 oz) cans of chunk chicken breast, drained
  • 16 oz cream cheese, softened to room temperature
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 cup ranch dressing
  • 1 cup blue cheese dressing
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Optional: 2 green onions, thinly sliced for garnish
  • Optional: Crumbled blue cheese for topping

Instructions

  1. In a medium mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down the sides of the bowl halfway through.
  2. Drain the liquid from the canned chicken and shred the chicken into small pieces using two forks.
  3. In the same bowl as the cream cheese, add the buffalo wing sauce, ranch dressing, and blue cheese dressing. Stir until well combined.
  4. Sprinkle in the garlic powder and onion powder, then stir to distribute evenly.
  5. Pour the cream cheese mixture into a slow cooker. Add the shredded chicken and both shredded cheeses. Stir until evenly combined.
  6. Cover and cook on low heat for 2-3 hours, stirring every 30-45 minutes to ensure even melting and prevent burning.
  7. The dip is ready when hot all the way through, bubbly around the edges, and the cheese is completely melted and smooth. If too thick, stir in a splash of milk or extra ranch dressing. If too thin, cook uncovered for 15-20 minutes.
  8. Garnish with sliced green onions and crumbled blue cheese if desired. Switch slow cooker to ‘warm’ setting to keep dip at serving temperature.

Notes

For best results, use full-fat cream cheese and shred your own cheese from a block. Avoid cooking on high to prevent dairy separation. The dip can be made ahead and reheated. Leftovers keep in the refrigerator for up to 4 days.
