This easy crockpot chicken and dumplings recipe is pure comfort food—tender chicken, fluffy dumplings, and a rich, velvety broth, all made with minimal effort in your slow cooker.

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 1 can (10.5 ounces) cream of chicken soup
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 medium carrots, sliced into rounds
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 cup frozen peas
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons unsalted butter, cold and cubed
  • 2 tablespoons fresh parsley, chopped
  • ¾ cup whole milk, cold

Instructions

  1. Prep the vegetables: dice onion, slice carrots and celery, mince garlic. Place them in the bottom of a 6-quart or larger slow cooker.
  2. Place chicken on top of vegetables. Sprinkle with thyme, rosemary, salt, and pepper. Add bay leaves and butter.
  3. In a bowl, whisk together chicken broth and cream of chicken soup until smooth. Pour over chicken and vegetables.
  4. Cover and cook on low for 4-6 hours or on high for 2.5-3 hours, until chicken is fork-tender.
  5. Remove chicken from crockpot and shred using two forks or a hand mixer on low. Return shredded chicken to crockpot. Discard bay leaves.
  6. In a large bowl, whisk together flour, baking powder, salt, and pepper. Cut in cold butter until mixture resembles coarse crumbs. Stir in parsley. Add cold milk and stir just until combined (dough will be sticky).
  7. Turn crockpot to high. Drop spoonfuls of dumpling dough onto the surface of the simmering broth. Do not stir.
  8. Cover and cook on high for 30-45 minutes without lifting the lid, until dumplings are fluffy and cooked through.
  9. Gently stir in frozen peas and let warm through for 2-3 minutes. Adjust seasoning with salt and pepper if needed.
  10. Ladle into bowls and serve hot, garnished with additional parsley if desired.

Notes

Do not lift the lid while dumplings are cooking. Use cold ingredients for dumpling dough. For thicker broth, mix 2 tablespoons cornstarch with 2 tablespoons cold water and stir in 15 minutes before adding dumplings. Leftovers can be stored in the refrigerator for up to 4 days; freeze the base without dumplings for up to 3 months.
