  • Salt and pepper to taste
  • Juice of 1 lime
  • Optional: Fresh cilantro for garnish

Instructions

  1. Pat the chicken dry with paper towels. Season both sides with cumin, garlic powder, chili powder, and a pinch of salt and pepper.
  2. Spoon the salsa over the seasoned chicken, leaving behind any watery liquid at the bottom of the jar.
  3. Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until the chicken is fork-tender.
  4. Remove the chicken to a cutting board and shred with two forks, leaving some larger chunks for texture.
  5. Return the shredded chicken to the crockpot and stir into the salsa sauce. Let sit for 5-10 minutes to absorb flavors.
