A quick and easy crustless spinach and feta egg bake that’s perfect for breakfast, brunch, or a light dinner. Made with simple ingredients like eggs, spinach, feta, and cottage cheese, it’s creamy, satisfying, and naturally gluten-free.

  • 8 large eggs
  • 5 oz fresh baby spinach (about 5 cups)
  • 6 oz feta cheese, crumbled
  • 1 cup small curd cottage cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or 8×8 baking dish with olive oil or butter.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 30 seconds.
  3. Add the fresh spinach to the skillet in handfuls, stirring constantly for 2-3 minutes until wilted. Remove from heat and let cool slightly.
  4. Transfer the cooked spinach mixture to a clean kitchen towel or paper towels. Gather the edges and squeeze firmly to remove as much liquid as possible. Roughly chop the squeezed spinach.
  5. In a large mixing bowl, crack the eggs and add the cottage cheese, salt, pepper, dried oregano, and red pepper flakes (if using). Whisk vigorously for about 1 minute until smooth and slightly frothy.
  6. Add the chopped, squeezed spinach and crumbled feta cheese to the egg mixture. Stir gently with a spatula until evenly distributed.
  7. Pour the mixture into the prepared baking dish and spread into an even layer. Bake for 25-30 minutes, or until the center is just set and the edges are golden brown. A knife inserted in the center should come out clean.
  8. Let the egg bake cool in the dish for 5-10 minutes before slicing. Serve warm or at room temperature.

Don’t skip squeezing the moisture from the spinach—it’s crucial for preventing a watery bake. For extra creaminess, use a water bath by placing the baking dish inside a larger pan and adding hot water halfway up the sides. Let the bake rest for 5-10 minutes before slicing for cleaner pieces.
