  • 4 oz Aged Manchego
  • 4 oz Gorgonzola or Roquefort
  • 4 oz Goat Cheese Log
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Salami (Genoa), sliced into thin rounds
  • 4 oz Soppressata, sliced
  • 810 Fresh Figs, ripe but firm
  • 1/2 cup Honey
  • 1/4 cup Fig Jam or Apricot Preserves
  • 1 Apple or Pear, sliced thin
  • 1 cup Red Grapes
  • 1/2 cup Toasted Walnuts or Pecans
  • 1/2 cup Marcona Almonds
  • 1/4 cup Dried Cranberries or Cherries
  • Fresh Rosemary Sprigs
  • Fresh Thyme
  • Crackers and Bread (water crackers, rosemary crackers, sliced baguette)
  • Flaky Sea Salt (like Maldon)

Instructions

  1. Warm the honey: Pour 1/2 cup honey into a small saucepan. Add 2 sprigs fresh rosemary. Heat over low heat for 3-4 minutes, stirring occasionally, until runny and fragrant. Do not boil. Set aside to cool slightly.
  2. Prep the fruit: Rinse figs and grapes. Slice figs in half lengthwise. Slice apple or pear into thin wedges and toss with lemon juice to prevent browning.
  3. Arrange the cheeses: Place cheeses on the board, spacing them out. For example, brie in top left, manchego in top right, gorgonzola in bottom left, goat cheese in bottom right.
  4. Add the meats: Fold prosciutto into loose ribbons and place near brie. Fan out salami and soppressata slices in lines or small piles.
  5. Fill in with fruits and spreads: Place small bowls of honey (remove rosemary sprigs) and fig jam on the board. Arrange fig halves, apple slices, and grape clusters in empty spaces, tucking figs near prosciutto.
  6. Add the crunch: Scatter toasted walnuts, marcona almonds, and dried cranberries in remaining gaps, spreading them out.
  7. Garnish and serve: Lay fresh thyme sprigs artfully around the board. Sprinkle a tiny pinch of flaky sea salt over gorgonzola and sliced apples. Arrange crackers and baguette slices in a basket or on the edge of the board.
  8. Final touch: Just before serving, drizzle a little warm rosemary honey over brie and goat cheese.

Notes

Let cheeses come to room temperature for 30 minutes before assembling for best flavor. Warm honey is essential—do not skip. Taste as you go and adjust seasoning. Prep components up to 24 hours in advance. Do not overcrowd the board; leave space for easy grabbing.
