These easy ground beef skillet tacos come together in under twenty minutes, use ingredients you probably already have, and require exactly one pan. Perfect for dorm kitchens or busy weeknights.

  • 1 pound ground beef (80/20 works great for flavor, but lean works too)
  • 1 packet taco seasoning (I prefer Old El Paso, but any brand works)
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 8 small flour or corn tortillas (warmed, for serving)
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1/2 cup shredded cheddar cheese (or Mexican blend)
  • 1/4 cup sour cream (optional, but recommended)
  • Hot sauce (to taste, I like Cholula)

Instructions

  1. Heat the oil in your skillet over medium-high heat. Let it get hot for about a minute. You want it shimmering but not smoking. If you’re using a non-stick pan, you can skip the oil and just use the beef’s natural fat.
  2. Add the ground beef to the hot skillet. Break it up with your spatula as it cooks. Don’t move it around too much at first—let it sit for a minute to develop a nice brown crust. Cook for about 5-6 minutes, stirring occasionally, until no pink remains.
  3. Drain any excess fat if needed. If you’re using 80/20 beef, there will be some fat in the pan. You can drain it by tilting the skillet and spooning it out, or just leave a little for flavor. I usually leave about a tablespoon in the pan.
  4. Add the taco seasoning and water. Sprinkle the seasoning evenly over the beef, then pour in the water. Stir everything together until the beef is well coated. Bring it to a simmer, then reduce the heat to medium-low.
  5. Let it simmer for 3-4 minutes. The liquid will reduce and thicken, creating a rich sauce that clings to the beef. Stir occasionally to prevent sticking. You’ll know it’s done when the mixture looks glossy and most of the liquid has evaporated.
  6. Warm your tortillas while the beef simmers. You can do this in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 20 seconds. I prefer the skillet method for those little charred spots.
  7. Assemble your tacos. Spoon the beef into the warm tortillas, then top with lettuce, tomatoes, cheese, sour cream, and hot sauce. Serve immediately while everything is hot.

Notes

Don’t overcrowd the pan if doubling the recipe. Let the beef rest after cooking for a minute or two. Toast your tortillas for better texture. Layer toppings strategically: cheese directly on hot beef, then lettuce and tomatoes on top. Use medium heat, not high, to avoid burning the seasoning. Always thaw frozen ground beef before cooking.
