  • 1 cup (90g) rolled oats
  • ½ cup (130g) creamy peanut butter
  • ¼ cup (30g) chocolate protein powder
  • 3 tablespoons (60ml) honey
  • ¼ cup (45g) mini chocolate chips
  • 2 tablespoons (14g) flaxseed meal
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the peanut butter and honey. Stir until smooth and well combined.
  2. Add the rolled oats, chocolate protein powder, flaxseed meal, and pinch of salt. Stir until no dry spots remain. The mixture should be thick and slightly sticky.
  3. Let the mixture rest for 5 minutes to allow the oats to hydrate.
  4. Fold in the mini chocolate chips until evenly distributed.
  5. Using your hands or a cookie scoop, portion the mixture into 1-inch balls (about 14-16 balls). Place on a parchment-lined baking sheet or plate.
  6. Chill in the refrigerator for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to two weeks, or freeze for up to three months.

Notes

For best texture, let the mixture rest for 5 minutes before rolling. If mixture is too sticky, chill for 15 minutes before rolling. If too dry, add a teaspoon of honey or milk. For a vegan version, use maple syrup instead of honey and plant-based protein powder. For a nut-free version, use sunflower seed butter.
